When I first started eating paleo, I couldn’t imagine eating meat and/or veggies for breakfast. The thought made me gag. So instead I had to start with some sweeter options to help with the transition. Way back when in 2010 I tried to make my first breakfast cookie...and failed miserably. Luckily I made up for it in 2019 with these Carrot Breakfast Cookies! These cookies are packed with flavor, a bit of sweetness, and a ton of veggies! It’s a win-win for breakfast!
